We were seeking delicious tacos, but we narrowed down our craving to one of the most unique cuts of beef and a true comfort food to thousands of taco consumers. Tres tripas tacos por favor. The cilantro lovers of the world will absolutely love El Paso in Iowa City. Our tacos were generously accompanied by this classic herb and freshly diced white onion. When your stomach rumbles, why not fill it with stomach. That’s just how I was raised. Tripas or tripe, is just that. The intentional track that all mammals have and when prepared correctly, they can be very tasty. Not all establishments can boast about their cooking technique when it comes to this organ, but El Paso has got the skills to make the tripas terrifically tasty. Fresh ingredients, plenty of flavor, and a home cooked feeling. That’s how you taqueria, amigos!
